Recipes for The Busy Professional: Crock Pot Chicken Tacos

April 8, 2012

Crock Pot Chicken Tacos

There is nothing like coming home from long day at work and having a nice hot meal ready for you.  If you’re not fortunate enough to have  a personal chef, now worries. With minimal preparation, you can have an authentic Mexican style meal ready for you and a few friends.  The crock pot does most of the work.  All you have to do is gather the ingredients, and toss them in.  Six hours later, you’ll have the best tacos you’ve ever tasted.

  • 6 boneless, skinless chicken breasts
  • 1 tablespoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1 ½ teaspoons ground cumin
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 (16 oz) jar salsa
  • flour tortillas (6 inch)

  1. Throw everything (excluding tortillas) into the crock pot and stir until chicken breasts are evenly covered in seasonings and salsa.
  2. Cover and cook on low until the chicken is fork-tender and shreds easily, about 6 hours. (Or alternatively, cook on high for 4 to 6 hours).
  3. To serve, heat tortillas according to package directions. Divide chicken evenly among tortillas; top each tortilla with desired toppings.

Yields: 4 servings
Prep Time: 5 minutes
Cook Time: 6 hours
